Thai Stir Fry Pork Mince And Basil

This Thai stir fry pork mince and basil is one of my husband's favourite dishes. I like to think it's a reminder of when we first started dating! It was actually one of the first things I ever cooked for him, but with chicken.

I'm probably being biased when I say that Thai food is the best food, because I'm Thai! But seriously, I feel healthier when I eat Thai food and I don't have to spend too much time on exercise! 

And I just have a different appreciation for it now that I'm living in rural Ireland. It's hard to find ingredients here and there has been a few times now that I had to order stuff from England, which means ridiculous delivery fees!

Luckily, this Thai stir fry pork mince and basil is easy to make and the ingredients are quite basic. So let's get cooking!

Thai Stir Fry Pork Mince and Basil



Ingredients

Meat

Pork mince – 500 g

Produce

Basil – 25 g (roughly a big handful)

Garlic – 2 cloves

Red capsicum – 1

Onion – 1 medium size

Green beans – 125 g

Condiments

Oyster sauce – 3 tbsp

Fish sauce – 1 tbsp

oils

Vegetable oil – 1 tbsp

Baking & Spices

Sugar – 1/2 tbsp

Liquids

Water – Half cup

 

Method

  • Heat oil in the frying pan on high heat
  • Throw in the onion to soften a bit, then add garlic
  • Add the pork mince, break it up so there's no clumps
  • Once the pork mince is cooked, add water, oyster sauce, fish sauce and sugar and stir through.
  • Now throw in all the vegetables.
  • Once it starts to sizzle, turn the heat down to simmer for a few minutes so the vegetables soften a bit.

Serve this with rice and garnish with chopped chilli. YUM!
